Low-Point Cola Chicken

Another wonderful recipe for those who have a five-or-less "ingredient rule", and I've been meeting more of those people everyday. This is a great recipe for those who work all day and don't have much time on their hands in the evening. The ingredients might make you skeptical, but the taste will make you a believer! This chicken, with a tangy, sweet and sour, barbequey (that's a new word now) flavor, will leave you looking forward to making this again and again!


Low-Point Cola Chicken
Ingredients:
- 4, 4 oz. boneless, skinless, chicken breasts
- 1 cup ketchup
- 1 can diet Coke
- Pam cooking spray
Spray large skillet with Pam cooking spray. Place chicken in skillet and cook on both sides over medium-high heat for several minutes. Mix ketchup and coke and pour over chicken. Turn chicken occasionally until done. Remove chicken and, if desired, add a little bit of cornstarch to the mixture to thicken. Pour over chicken and serve over a little bit of rice (if desired).
